Scottish Baps Recipe

Takes about 25 minutes preparation, 1 and a half hours rising time, and 15 to 20 minutes baking time.
Recipe calls for 12 baps and you will need:
- 1 package active dry yeast
- 1 teaspoon granulated sugar
- 2 eighths cup of warm milk, about 105-115 degrees F
- 2 thirds cup warm water, about 105-115 degrees F
- 3 and a half cups of all purpose flour
- 2 teaspoons of table salt
- 1 fourth or half a stick of chilled butter, cut into small pieces
Glaze and Topping
- 2 tablespoons of milk
- 1 tablespoons all purpose flour
- In a medium sized bowl dissolve your dry yeast, and sugar in the warm milk and water. Let this mix sit until you see foamy bubbles, generally 5 to 10 minutes.
- Within a large bowl mix all of your salt and flour with your tiny pieces of butter. Make sure you lightly mix with a fork until coarse crumbs form, don't over mix.
- Stir your yeast mix into your flour mix in a large enough bowl and stir until well combined. Very important to cover with loosely damp cloth, then allow to rise in a warm place until size has doubled or tripled for 1 hour.
- Prepare a greased baking sheet or pan, then punch down dough on a flour coated surface. Knead dough until smooth and elastic like, generally about 6 to 9 minutes;continue to add flour as you go to prevent sticking.
- Preheat your oven to 400 degrees F, it is ideal for the oven to already be at an uniform temperature before adding the ready rolls in the next step(6).
- Literally roll the dough into a fat rope and cut 12 or your preferred size and amount, into equal pieces. Now, shape each of your pieces into an oval roll, then place your rolls at least 2inches apart on to your greased baking sheet. Cover with a damp cloth again, and let rise in a warm place until size doubles, generally an additional 30 minutes.
- Before adding your rolls, brush their tops with milk(some use butter also) and dust lightly with flour.
- Bake until rolls are golden and/or exude a hollow sound with you tap the bottom, literally. General baking time is around16 to 20 minutes, after which transfer to wire rack or suitable dry surface to cool a little.
Best when still warm for best flavor, traditionally some serve with marmalade or even butter. Serve and enjoy!
